Pressed at the very beginning of the harvest season of 2026, this early-season extra virgin olive oil captures olives at their most vibrant and alive stage of ripeness - green, vibrant and full of flavour.

Made from the first olives picked in the beautiful groves of Canillas de Aceituno, in the hills of Andalusia, this small-batch oil is pressed within hours of harvest and left unfiltered, preserving its natural texture, colour, aroma, and vitality.

The result is a beautifully green and bright oil — fresh cut grass, green almond, wild herbs — with a gentle ~ barely there ~ bitterness and a lively but smooth finish.

Low acidity and oxidation (we have the numbers to prove it). Nourishing as it is expressive, prized both for its health benefits and its smoothness of flavour.

Made for everyday use. This is an oil made for cooking and finishing.

Drizzled over warm grilled vegetables, flavourful soups, grilled fish, greens from the garden, or simply enjoyed on its own with sourdough.

This isn’t anonymous oil - from trees we can’t name or don’t know.

The olives that are picked and pressed are from the groves we know well.

We harvest our own trees, from our own grove, with our own hands.

We collect with other farmers in our village.

Their trees. Their olives. Their hands.

Families who have worked this land for generations.

We harvest alongside farmers on their land and in their groves -

and what you’re holding is part of that rhythm.
