Pressed at the very beginning of the harvest season of 2026, this early-season extra virgin olive oil captures olives at their most vibrant and alive stage of ripeness - green, vibrant and full of flavour.
Made from the first olives picked in the beautiful groves of Canillas de Aceituno, in the hills of Andalusia, this small-batch oil is pressed within hours of harvest and left unfiltered, preserving its natural texture, colour, aroma, and vitality.
The result is a beautifully green and bright oil — fresh cut grass, green almond, wild herbs — with a gentle ~ barely there ~ bitterness and a lively but smooth finish. Naturally high in polyphenols, it is as nourishing as it is expressive, prized both for its health benefits and its intensity of flavour.
This is an oil made for finishing and cooking.
Drizzled over warm grilled vegetables, flavourful soups, grilled fish, greens from the garden, or simply enjoyed on its own with warm sourdough - masa madré. A little drizzle is enough to transform any dish into richness and vitality.
